Le Viet - A taste of good Pho

Situated among the many eateries of Siglap, this little viet restaurant is the least eye-catching among others like Lemongrass and Secret Recipe.My dining experiences here has so far been pleasant.Today, after an over-indulgance in fat-laden food, Mr HB wanted something that is easy on the stomach. After some moments of brain-storming, I suggested that we give Le Viet a visit since beef noodls soup sound pretty healthy to me.My suggestion went down pretty well with Mr HB and we were on our way to Siglap in a jiffy.As it was a weekend evening, the car parks were in high demand. We had to wait a while to enter as the car park was full.For a weekend dinner, the place was relateively empty; it was like 50% full. There are some couches towards the entrance of the restaurant for those who are there to chill out. Serious foodies who are waiting to pig out should avoid these comfy couch as they are rather low and not condusive for strenuous workout like lunch and dinner.We flipped thru the menu very briefly as we already had in mind what we wanted which went something like2 beef noodle soup, 1 spring roll, plum soda for the mister and 3-colors (which is actually chendol without brown sugar) for me.The drinks were the first to arrive, the plum soda really does taste like a soda, there was no tinge of plum taste to me. The 3 colours was quite re-freshing, served with lots of red bean (i like..) coconut milk and the green chendol. The only grip was, it was really sweet. The amateurs like myself should try to dilute it with water to make this more appealing.Then the pickled vegetables came, or better known as "a-char" locally. This little dish was well seasoned and filled with peanut and was crunchy to the bite. I do find this enjoyable.Finally, the pho arrive, still piping hot. First, I slurped at the soup which is very flavourful despite the deciving clear soup. The noodles is best eaten with the beansprout which adds crunch to the dish. Smooth thin flat noodles with crunchy beansprouts and tender beef slices all go down very well together. The fried pork spring roll is worthy of mention as well. This dish is served with a spicy tangy sauce that adds to the oomph factor of the springroll. Suitably fried to a good crisp, the spring roll is tasty and pleasing to the palate, highly recommended as a side dish to complement the meal.The servers in Le Viet appeared to be authentic vietnamese who does not speak the most perfect english but nontheless very obliging to requests and prompt in service.
